Cucumber & Tomato Salad: Refresh Style

While my husband... I mean test subject... was completing his 3-Day Refresh, I had to honor of doing most of the food preparation. I know, I know - best wife ever ;)

It is nice to have lots of fruits and veggies around and prepped because it makes it easier to choose them when you're hungry! I sampled most of his food (or all of it) which he was doing the cleanse. My favorite of all of the dinner options was the Cucumber and Tomato Salad.

2 tbsp. red wine vinegar
2 tsp. balsamic vinegar
4 tsp. lemon juice
2 tsp. olive oil
1 cucumber, halved & sliced
1-2 large tomatoes (can also use a cup of cherry tomatoes)
2 tbsp. chopped red onion
1-2 tbsp. parsley
1-2 tbsp. basil
dash of Himalayan salt or sea salt

Combine cucumber, tomato, onion, parsley, basil, and salt in a large bowl. Then in a separate small bowl combine vingars, lemon juice, and olive oil for dressing. Drizzle dressing over cucumber/tomato mixture. Plate & enjoy!
